Beef Meat yield

Live Weight

Live weight is what your animals weights while it is alive. This is typically something you should know before you bring your beef in for slaughter.  A good slaughter weight for beef will depend on breed and how it was finished.

Carcass Weight

The yield of edible meat from a beef carcass often comes as a bit of a surprise, even to those that have had their own meat processed for years. The percent of the live animal weight that becomes carcass weight, which for fed beef is usually around 59-63%. So, from a 1200lb steer at 63%, you should get around a 750lb carcass (hanging weight). But not all of that carcass is going to end up in your freezer.

Finished Weight

The expected yield of finished meats (meat back to the customer) from a beef carcass is about 61-65% of the hanging weight as finished meats (roasts and steaks) and lean trim. You start with a 1200lb steer, which has a dressing percent of around 63%, which should leave you with a hanging weight of around 750lbs. From that, you will get about 65% of the hanging weight or roughly 490lbs of bone-in cuts on a whole steer. So roughly 41% of the live weight will end up in your freezer. It can vary from steer to steer so keep in mind these are just approximate averages.
