Lamb/Goat Meat Yield

Live weight

Lamb and goat are very similar in size and anatomy, so they will be about the same on yield.  A good slaughter weight for both is around 140-150lbs of live weight.

Carcass Weight

The carcass weight is typically about 50% of the live weight. So a lamb weighing 150lbs should be around 75lbs hanging. 

Finished Weight

The finished weight is typically about 75% of the hanging weight. So 75% of a 75lb hanging weight should put your finished weights right around 56lbs of bone-in cuts. So roughly 36% of your live weight would be finished weights. Keep in mind this can vary from animal to animal and these are just approximate averages.
