Since it would be difficult to tell the live weight of a deer and antelope we will base everything on carcass weight. Carcass weight is the hanging weight of the animal minus the Head, feet, skin, blood, and guts. Most would refer to this as a field-dressed animal. This will vary from animal to animal.
There are a lot of factors that go into meat yield on wild game. For a mule deer, it should be around 55-59% of the carcass weight (hanging weight). Let's use an average field dress weight for a buck MULE deer at around 114lbs for example purposes only. Other species of deer will most likely be smaller. So, on a 114lb field dressed mule deer, 59% would be around 67lbs of meat back to the customer. Things that might affect that total would be, for example, meat that was not properly taken care of in the field (starting to rot) or an animal that was shot multiple times would have areas of meat that would need to be cut away and disposed of. Cleanliness of your field dressing goes hand in hand with meat yield as does shot placement. Please keep all these things in mind after you have an animal down on your hunt.
